Chicken Aloo Masala/Chicken Masala/Murgh Masala

Chicken Masala is prepared in  many different ways across  India. This is one of my version which is simple, less time taking as well as less oil and spices. In whole a healthy version in less time. Hope this recipe will helps foodies those who want to save some time from cooking and really helpful for beginners too!.

In restaurant and many people use yogurt, cream, poppy seeds, coconut milk, cashews..etc to give the recipe a rich taste. I have came with very simple, healthy and home style recipe which is as tasty and delicious as  restaurant.

So lets start...

INGREDIENTS

For Chicken Masala


Chicken curry cut(1/2 kg)
Masala Paste(grind onion,garlic,ginger,coriander seeds,cumin,dry red chilli,green chiili,cinnamon, cardamom)
Potatoes(4 small size) chopped into half(optional)
2 Medium Onion(finely chopped)
1 Medium Tomato (finely chopped)
1 bay leaf

Mustard oil 10tbsp
11/2 tbsp Kashmir chilli powder
1/2 tsp turmeric powder

Garam Masala 2tbsp
Chicken Masala 2 tbsp
1/2 tsp sugar
Salt to taste
1tbsp freshly chopped coriander leaves
1 cup Water

For Masala

2 Medium onions(roughly chopped)
Garlic 8-10 pods
Ginger 1inch (roughly chopped)
Coriander seeds 1tsp
Cumin Seeds 1tsp
2 Dry red chilli
1 Green chilli

1 inch cinnamon
2 cardamom

Procedure to Make Masala:

Place all ingredients into mixie jar and put little water and  grind to paste.



Procedure:
  • Clean the chicken and keep it aside
  • Place a heavy bottom pan or kadhai put the oil and once the oil is heated, 
  • Let the sugar to caramelized (don't burn it) 
  • Now add bay leaf 
  • Now add the turmeric and chilli powder
  • Immediately add finely sliced onions,and saute till it turns golden brown(tips: add salt in this stage as it helps the onion to cook fast)
  • Now add in tomatoes and cook till the tomatoes turn little mushy.
  • Add garam masala and chicken masala and saute it for 5 minutes.
  • Time for masala to go in, saute it 10 minutes
  • Now add chicken and raw potatoes into the masala till it roasted and cooked( all raw smell of masala goes off and oil start coming from sides) in slow flame for around 20 minutes.
  • Cooking chicken in simmer will help the masala to get into chicken whic result as juicy and tender chicken. And enhance the taste of chicken masala.
  • Now add fried potatoes or you and raw potatoes after adding masala
  • Now add water and bring this whole thing to a good boil, cover and simmer till oil floats on top.
  • Garnish it with chopped coriander leaves.
  • Chicken Masala serve hot with rice or chapatis( Indian breads).
