Koshala saga,badi,nadiya bhaja is an odiya dish prepared especially during the 
festivals.It's a pure vegan dish paired with rice/kichdi and dalma. And it's a very popular combination on auspicious days or festivals.Among all green leaves recipes these are my all time favorite!.


You may use vegetable oil or ghee, mustard seeds, cumin seeds (jeera), fenugreek seeds (methi), fennel seeds (pan mahuri), dry chilli (sukhila lanka maricha), curry leaves (bhrusanga patra), ginger, green chilli, salt ,badi(badi is sun-dried lentil and tastes great if added to selected traditional dishes) and nadiya(grated coconut).

Koshala saga is prepared in several methods both bhaja(stir fry) and tarkari(curry) all I can say all the variation's are equally delicious!.

Ingredients

Koshala saga/cholai saag/Amarnath leaves-2 bowl (finely chopped)
Badi-1/2 cup(fried and crushed)
Coconut-1/4 cup(grated)
Panach Foran(cumin,mustard,fennel seeds, fenugreek,red chilli) 1 tbsp
Ghee 4 tbsp

Procedure

  • Clean green leafs with running water and chopped finely and keep it aside
  • Now take fry pan add 2 tbsp of ghee once heated
  • Add crushed badi and stir fry till it turn golden brown
  • Keep it aside
  • Now for tempering ,take a pan
  • Now add ghee, once the ghee is heated
  • Add cumin, mustard, fennel seeds, Fenugreek and whole dry chilli
  • Let it splutter
  • Now add green leaves and cook it in low flame till the leaves become tender
  • Now add grated coconut and fried badi
  • Give a good mix so that all ingredients will combined properly.   
  • Shallow fry till all evenly cooked, crisped
  • Ready to serve with your favorite platter.   
  • It's paired with steam rice ,dalma!
