Odiya Anda Aloo tarkari/Egg Curry/Anda Tarkari- Delicacy of Odisha/dimb jhol/odiya style anda tarkari

Egg Curry/Anda Tarkaror Anda Jhol/jhal- Egg Curry is very famous non-vegetarian food in Odisha!!

Egg's are one of most loved and famous non vegetarian, and easily and readily available in every odiya's kitchen.As the use of egg is versatile and loads of protien, and very important can be stored out of refrigerator!!. That was a bless, as in our culture we have many restriction's were allowed to eat/ cook non-vegetarian food only specific days of the week, like Wednesday ,Friday and Sunday .And in our home Friday was one such day which we eagerly looked forward to have this dish. Specially prepared by Maa, the taste give an immense pleasure!!

Eggs are a very good source of inexpensive, high quality protein. More than half the protein of an egg is found in the egg white along with vitamin B2 and lower amounts of fat and cholesterol than the yolk. The whites are rich sources of selenium, vitamin D, B6, B12 and minerals such as zinc, iron and copper.


I have came with my Version of egg curry/annda tarkari..Delicious,Easy, simple version.Hope you all will like it.

INGREDIENTS

For Egg curry


Eggs: 4 nos(boiled)
Masala Paste(grind onion,garlic,ginger,coriander seeds,cumin,dry red chilli,green chiili,bay leaf,cinnamon, cardamom)
Potatoes(2 small size) chopped into half(optional)
1 Medium Onion(fine slices)
1 Medium Tomato (fine slice)
1 bay leaf

Mustard oil 10tbsp
11/2 tbsp Kashmir chilli powder
1/2 tsp turmeric powder
1/2 tsp sugar
Salt to taste
1tbsp freshly chopped coriander leaves 
11/2 cup Water

For Masala


2 Medium onions(roughly chopped)

Garlic 8-10 pods
Ginger 1inch (roughly chopped)
Coriander seeds 1tsp
Cumin Seeds 1tsp
2 Dry red chilli
1 Green chilli

1 inch cinnamon 
2 cardamom 
1 small Bay Leaf

Procedure to Make Masala:


Place all ingredients into mixie jar and put little water and  grind to paste.



Procedure:


  • Place a heavy bottom pan or kadhai put the oil and once the oil is heated, add the red chilli(1/2tsp) and turmeric(1/2tsp)
  • Now add boiled eggs(To boil in 2 cup water add 4 eggs and boil it for 15 minutes in medium flame)
  • And saute it till it turns golden brown, the outer layer will be crispy
  • And now add sugar to it
  • Let the sugar to caramelized (don't burn it) 
  • Now add bay leaf 
  • Add sliced onions,and saute till it turns golden brown(tips: add salt in this stage as it helps the onion to cook fast)
  • Now add in tomatoes and cook till the tomatoes turn little mushy.
  • Now add the turmeric and chilli powder,saute it for a few seconds
  • Time for masala to go in, saute it till it roasted and cooked( all raw smell of masala goes off and oil start coming from sides)
  • Now add fried potatoes or you and raw potatoes after adding masala
  • Now add water and bring this whole thing to a good boil, cover and simmer till oil floats on top.
  • Now add in fried eggs and cook for 10 mins.
  • garnish it with chopped coriander leaves.
  • Egg curry/annda tarkari serve hot with rice or chapatis( Indian breads).
