Rice Kheer (kheeri)

When I used hear the word “Kheer” at home , first thing comes in my mind..”What special occasion today?, Maa is preparing kheer!". Yes you are correct!!!.. Kheer is prepared in festivals, temples, and all special occasions. Being an Odiya, kheer is the very famous dessert prepared for special occasions..it might be birthday’s, festivals or auspicious days or any guest invited to home!!! Kheer is a must recipe in every house in Odisha for celebrating special ocassion’s.

        Rice Kheer -Kheer is a rice pudding from the cuisine of the Indian subcontinent, made by boiling rice, broken wheat, tapioca, or vermicelli with milk and sugar; it is flavored with cardamom, raisins, saffron, cashews, pistachios or almonds. It is typically served during a meal or as a dessert. It is also known in some regions as payesh, payasam, payasa.

I have came with my Version of Kheer which doesn't require much cooking skills...Delicious,Easy, simple version.Hope you all will like it.

Ingredients:

1 liter milk
1/2 cup sugar
1/4 cup condensed milk 
6 Cardamom
Few saffron strands
1/4 cup basmati rice(coarsely grind ed)
Few saffron strands

Procedure:
  • Rinse the rice till water run clear of starch.
  • Dry the rice by using a clean towel(let the rice completely dries)
  • In the mean time take heavy bottom pan pour 1 ltr milk let it boil then add sugar 
  • Let all the sugar break down
  • Then add crushed cardamom( crush it using hand pestle)
  •  Keep stiring in interval of 5 mins
  • Now grind your dry rice coarsely and add it to milk
  •  Add a pinch of salt
  • Let it cook for 20 minimum shimmer
  • Time to add condensed milk and keep stirring in regular intervals. 
  • Wait till rice cooked and milk has reduced to half.
  •  You can keep consistency according to your choice
  • Off your gas stove
  • Add few saffron strands as garnishing
  • Your Yummy and delicious kheer is ready!!
  • Serve it warm or cold as per your choice!
