Alu Bharta/Vrat walle aloo/Mashed tempered Potatoes-Odisha Delicacy

Alu/Aloo Bharta is an odiya dish prepared especially during the festivals.It's a pure vegan dish paired with rice/kichdi and dalma. And it's a very popular combination on auspicious days or festivals.

Ghee, mustard seeds, cumin seeds (jeera), fenugreek seeds (methi), fennel seeds (pan mahuri) or Ponch foron dry chilli (sukhila lanka maricha),ginger, green chilli, salt  is used prepare this dish.

Alu/Aloo bharta/Vrat walle aloo is prepared in several methods all can say all the variation's are equally delicious!.

Ingredients

Potatoes 3 Medium size
Ginger Grated(1 inch grated)
Green Chilly 2 crushed(adjust according to your preference)
Ghee 2 tbsp
Panch Foron(Cumin,Mustard,Fennel seeds,Fenugreek,Dry red chilly)
Coriander leaves (finely chopped)
Salt to taste

Procedure
  • Clean potatoes with running water and cut into half or whole
  • Place pressure cooker and place potatoes and give 2 whistle
  • Let it cool completely and peel off the potato skin
  • Now take your mixing bowl and mashed the potatoes with help of fork spoon(can use hands carefully as it will be hot)
  • Now for tempering ,take a pan
  • Now add ghee, once the ghee is heated
  • Add cumin, mustard, fennel seeds, Fenugreek and whole dry chilli
  • Let it splutter
  • Add grated ginger and crushed green chilli and saute for 2 minutes(don't burn it)
  • Now transfer the mashed potatoes and add salt
  • Give a good mix so that all ingredients will combined properly.   
  • Garnish it with chopped coriander leaves.
  • Ready to serve with your favorite platter.
